Meatloaf Muffins
Meatloaf is very economical and personal. The basics to a good meatloaf is ground beef, garlic, onions, bread crumbs, and at least one egg to use as a binder. It can be made in a 9 by 5 loaf pan or even made in muffin cups as I did below. As for the seasonings, vegetables, and/or cheese, you simply add ingredients to your liking. Try out this recipe for meatloaf muffins, I am sure you’re going to love it! Just to give you an average, I use 1 pound of ground beef for 6 muffins. So double the amount if you plan on making an even dozen.
Meatloaf Muffins
1 lb ground beef
1 Tbsp garlic, minced
1/4 onion, diced
1 cup of bread crumbs
1/2 cup of parmesan cheese
1 Tbs Salt
1/3 cup of Italian Seasoning
1/2 cup spinach, chopped
2 tsp Worcestershire sauce
1 egg, slightly beaten
ground pepper
(optional cooked cauliflower)
Directions– 1. Preheat oven to 350. 2, Over medium/high heat, saute onions and garlic until fragrant. Set aside and let it cool. 3. Meanwhile mix the other ingredients together and add the onion/garlic mixture. 4. Fill each muffin cup and top it with 2 tsp of ketchup. 5. Bake for 25 – 30 minutes. 6.Let it stand for about 5 minutes before removing the muffins from the tin. 7.Run a knife around the edges to help loosen each muffin. (Optional- For this particular recipe- I steamed some cauliflower, then drained and mashed it. When the meatloaf had baked for 20 minutes, I took it out of the oven and topped each meatloaf muffin with mashed cauliflower. When all 6 meatloaf muffins were done, I placed the muffin tin back in the oven for 10-15 minutes.)
