Easy Roasted Butternut Squash and Zucchini
We never seem to get enough vegetables into our diet. Here is an easy yet delicious recipe for easy roasted butternut squash and zucchini.
Ingredients:
1 ½ cups of butternut squash, chopped
1 ½ cups zucchini, chopped
Salt and pepper to taste
2 Tablespoons of olive oil
Directions:
Preheat oven to 400 degrees. Toss the veggies with the olive oil, basil, salt, and pepper and place on a baking sheet in a single layer. Roast in the oven for about 15 minutes, or until tender, stirring once or twice while baking.
