Foods That Do Not Freeze Well
It is important that you understand what foods do not freeze well. There is nothing that is more upsetting than freezing something only to have to throw it out later because it went bad. When food is frozen, the moisture expands in the cells. Foods that contain a lot of moisture, what happens is the cells burst during freezing and when defrosted, they become limp.
Salad Greens– You don’t want to freeze salad greens if you want them to stay crisp and tasty. If frozen and then thawed, the greens will become soft and wilted. They will also lose much of their flavor. Instead of freezing them, wrap in a paper towel, place in a plastic bag and store in the fridge.
Fresh Eggs– You cannot freeze eggs that are still in the shells because this poses health risks. When eggs freeze, the moisture in the eggs will expand and cause cracks in the shell. Any bacteria that is on the exterior of the shell will seep inside the egg. Freezing may slow down the growth of bacteria but it will get rid of it.
Herbs– Herbs such as parsley, basil and chives should never be frozen as they are on their stems. You can only freeze herbs by blending them with olive oil, freezing in ice cube trays and using them in stews and soups. You can also make a pesto and freeze the pesto.
Soft Cheese– The majority of soft cheeses will not do well in the freezer. Cream cheese is one and will get watery when thawing.
Fried Foods– We have all been there: we tried to reheat chicken nuggets or onion rings that have already been cooked and cooled off. If you have then you know how soft and soggy these foods get during the reheating process.
Milk– When you freeze milk and then try to thaw it out, you will notice clumps in your milk. There is an exception to this rule however. You don’t want to freeze milk if you are just drinking it but if you are using it for cooking or baking, you can freeze and thaw it, just know that it will be lumpy. The milk will not be bad though. Let the milk thaw out for at least a day in the fridge before using.
Potatoes– Potatoes have high concentrations of water. Because of this, when you freeze raw, whole potatoes, ice crystals will form. When you thaw the potatoes out, you will end up with a mushy mess of a potato.
