Homemade Bakes
Homemade bakes are very easy to make and are a special treat. You can make them on the weekend for breakfast if you find yourself pressed for time during the week. These do need a little time to set and let the baking powder rise. This helps to give it its light, airy texture. Although light and airy on the inside, the outside of these deep fried treats are crispy and delicious.

Homemade Bakes are also known as floats and are often served for breakfast in Guyana. Although these are sweet bakes that are eaten for breakfast with peanut butter, jam, or a la carte. You can easily omit adding the sugar and serve them up alongside some fried kidney, liver, or even fried fish. Another thing that makes these so popular is that they are very economical because only a few ingredients are needed to whip up a batch.
Bake (Float)
3 cups all purpose flour
1 tbsp baking powder
1/3 cup sugar
4 tbsp butter
Pinch of salt
About 1 cup water
Directions-
1. Mix dry ingredients in bowl. Spoon the 4 tbsp soft butter into the bowl and use two butter knives in scissor-like fashion to cut in the butter. You can also use your hand to mix butter into flour. Mixture should be crumbly.
2. Move the flour away from the center of the bowl to make a hole, otherwise known as a well. Take your one cup of water and add gradually. You may not need to use the whole cup of water. Dough should be firm but not stiff or sticky.
3. Form into ball and let the dough sit for about a half and hour. You can also do the short method, in which I did and that was to roll dough into a large square about 1/2 inch thick on counter top and let it rise that way.
4. Use a biscuit cutter or the rim of a glass to cut the dough into circular rounds.
5. Heat about 3 inches of oil in fry pan or pot, whichever you use to deep fry.
6. Place a paper towel on large plate for the finished bakes to sit on to drain some of the excess oil.
7. Test to see if the oil is hot enough by putting a little water on your finger and splashing it into
the hot oil.
8. Place about 5 uncooked bakes into the hot oil. Fry dough on one side until golden brown, then flip
it over on the other side and fry until golden.
9. Place the fried bake on a paper towel to drain.
10. Serve hot or cold.
