Pinwheel Cookies
The red, white and blue color of these pinwheel cookies make them perfect to serve guests for the 4th of July. Of course, you could change out the food coloring to colors of your own choice to make them suit your specific occasion. They are easy to make and are a delicious treat.
Red-White-& Blue Pinwheel Cookies
Ingredients:
5 cups flour
2 tsp baking powder
1 tsp salt
1 1/2 cups soft unsalted butter
2 cups granulated sugar
4 eggs
Red & Blue gel food coloring
Directions:
1. Cream the butter and sugar together until the combination is smooth not grainy to the touch in a mixing bowl.
2. Add all 4 eggs at one time…Continue to mix.
3. Add the vanilla.. Continue mixing.
4. Sift the four, baking powder, and salt together.
5, Add the dry mixture to the wet mixture.
6, Continue mixing to make sure all ingredients are thoroughly blended.
7, Divide your batter into thirds.
8. Place in separate bowls.
9, In bowl #1 add red gel food coloring. Using your hands to knead the dough to make sure the color is even throughout.
10. In bowl#2 add the blue gel food coloring. Using your hands to knead the dough to make sure the color is even throughout.
11. In bowl #3 the color remains as it is.
13. Place in the refrigerator for at least one hour or over night.
14. Remove from the refrigerator.
15. Select your main color which will be the outside roll of the pinwheel.
16. Flour 3 cutting boards and rolling pin.
17. Taking your primary colored chilled dough and cover it with flour.
18. Using your rolling pin flatten (roll) out that dough. Leave on that cutting board.
19. Taking your secondary colored dough and cover it with flour… Using your rolling pin flatten (roll) out that dough.
20. Taking your third dough out (white) and cover it with flour… Using your rolling pin flatten (roll) out that dough.
21. Using a metal spatula to lift up the #3 (white) rolled out dough.
22. Lay that batter on the top of your primary dough. (Red)
23. Using a metal spatula to lift up the #2 (blue) rolled out dough.
24. Lay that dough( blue) on the top of the white dough.
25. Using your rolling pin roll the two together… Cut away any extra chilled dough.
26. Roll the combined chilled dough into one log.
27. Wrap this log with plastic wrap closing both ends.
28. Place in your freezer for about one hour.
29. Preheat oven to 350 degrees.
30. Take out of your freezer and remove the plastic wrap, cutting the dough into 2 inch pieces, keeping the shape of a circle. (If the come loose then put your finger in a cup of water to use as paste to “glue” the cookie back together.
31. Place the cut slices on a parchment paper lined cookie sheet.
32. Bake at the 350 degrees for 18- 20 more minutes or until they are slightly brown on the bottom.
