Chicken Souvlaki with Tzatziki Sauce
When it gets too hot to cook indoors, many people prepare meals on the barbecue. This Chicken Souvlaki with Tzatziki Sauce is a perfect meal for the hot weather. Serve it with a Greek Salad and grilled pita bread. It is easy to prepare and takes very little effort to make. This dish can be made any time of the year, if you are brave enough to barbecue in inclement weather.
Chicken Souvlaki with Tzatziki Sauce
Ingredients
2/3 cup olive oil
2-3 TBSP oregano
4 cloves garlic, chopped
4 TBSP lemon juice
2 TBSP red wine vinegar
salt & pepper to taste
1 TBSP garlic powder
1 lemon
2 lbs. boneless chicken breasts
4 wire or bamboo skewers for grilling
Instructions-
1. In a medium bowl, whisk all ingredients together, except chicken.
2. Remove all fat from chicken breasts.
3. Cut chicken into cubes for skewers.
4. Place chicken in Ziploc bag and pour marinade into bag.
5. Make sure everything is coated.
6. Marinate in refrigerator at least 4 hours or overnight for maximum taste.
7. Place chicken cubes on skewers and grill.
8. Slice lemon in half and place on grill.
9. When lemon gets grill marks it is ready.
10. Squeeze grilled lemon on finished chicken.
11. Cut pita bread into quarters and brush with oil oil. Place on barbecue and grill until
it is golden brown.
12. Serve with grilled chicken souvlaki.
Homemade Tzatziki Sauce
Ingredients
1 8 oz. container of plain Greek yogurt
1 8 oz. container of sour cream
2 TBSP olive oil
1 large cucumber peeled, seeded and chopped fine
½ lemon juiced
1 TBSP dill
3 cloves garlic chopped fine
Instructions–
1. Combine all ingredients and stir well.
2. Chill in refrigerator for at least 2 hours.
3. Serve with grilled pita
