Pico Topping for Tacos, Soup, Chili, and Everything Else
The title says it all! This Pico Topping for Tacos, Soup, Chili, and Everything Else is really tasty and full of goodness! It can be eaten a la carte, spooned on top of lettuce, tacos, pitas, soup, chili, and other dishes as well. It definitely will increase your daily intake of vegetables, fiber, nutrients, and vitamins. You can adjust the amount of cayenne pepper according to your taste.
INGREDIENTS:
3 Roma tomatoes, seeded and diced
1-2 jalapeno peppers, seeded and diced
1 large red bell pepper, diced
1 large orange bell pepper, diced
1 large yellow bell pepper, diced
2 large avocados, seeded and diced
1 15 oz can black beans, drained and rinsed
1 15 oz can whole kernel corn, drained
1 cup chopped fresh cilantro
1 cup chopped red onion
4 Tbsp. freshly squeezed lime juice
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. cayenne powder
DIRECTIONS
Prep all of the vegetables that you will be using to create the Pico.
Place the red onions, jalapenos, peppers, beans, corn, cilantro and tomatoes into a large bowl.
Stir to combine.
In a small bowl, add the lime juice, garlic powder, cayenne powder, cumin and salt. Mix well until combined.
Add the seasoning mix to the cut up vegetables.
Add the diced avocados and lightly toss to combine.
Refrigerate for up to 48 hours or serve immediately.
