Sweet & Creamy Crockpot Corn Chowder
Fall means cooler weather, falling leaves, pumpkins, apples, and crockpot cooking. It also means that kids are back in school, and busy schedules. Parents are usually running back and forth to school meets, sporting events, and after school pick-ups. Once everyone arrives at home, they are simply starving! No need to worry and stress over dinner when you pull out your crockpot and make this Sweet & Creamy Crockpot Corn Chowder! Simply get up early in the morning, prep the ingredients, add them to the crockpot, set it and forget it. Dinner will be fully cooked and waiting for you when you are hungry.
Sweet & Creamy Crockpot Corn Chowder
Ingredients
6-8 potatoes (peeled and diced)
1 can cream corn
1 can whole kernel corn
2 cups chicken broth
8 ounces diced ham
1 cup diced onions
2 cups half and half cream
Directions
1. Place potatoes, canned corn, chicken broth, ham, and onions into the slow cooker and cook on low for 7-8 hours.
2. Mash up the mixture to your desired consistency to make a nice creamy texture and bring out the sweetness in the corn. I used this hand blender and it works wonderful in soups.
3. Add in the butter and half and half
4. Cook for an additional 30 minutes on high
