Chipotle Shrimp Tacos
These Chipotle Shrimp Tacos are delicious and easy to make. Make them for dinner and get your daily intake of important vitamins and minerals. You can add in as much heat as you would like. They make a great meal for Cinco De Mayo or any time of the year. This recipe also includes two bonus recipes for Chipotle Lime Creama and Pico de Gallo.
Chipotle Lime Creama
1/3 cup sour cream
3 Tbsp lime juice
1/2 Tbsp chipotle oil
1/2 Tbsp of Tony Cacheres seasoning
1/4 tsp of cumin
Salt to taste
Chipotle Shrimp
1 lb shrimp 51/60
1 teaspoon chili powder
1 teaspoon kosher salt
1 teaspoon Tony Chacheres Creole seasoning
1 teaspoon of Chipolte oil
1/2 Tbsp garlic
2 teaspoons olive oil
Pico de Gallo
7 Roma tomatoes
1 yellow onion
3 Jalapeños, chopped – remove seeds
1 Tbsp garlic
1 Tbsp Chipotle chili powder
juice of one lime
1/4 cup chopped cilantro
Chipotle Cabbage
2 cups cole slaw
1/4 cup Chipolte Mayo
1 teaspoon Chili Powder
1/4 cup cilantro
Toppings
Avocado
Lime
Pico de Gallo
Directions
Chipotle Lime Creama
In a small bowl whisk together the sour cream, lime juice, chipotle chili powder, and cumin. Season to taste with kosher salt. Refrigerate until ready to use.
Pico de Gallo
Chop tomatoes, chop jalapenos, discard seeds. Chop onion and garlic. Place in bowl. Add in 1 Tbsp Chipotle chili powder. Mix well. Chop cilantro. Add to bowl. Squeeze the juice from one lime over top of the Pico de Gallo.
Shrimp
Place the shrimp in a Ziploc bag adding in the spice mixture and let marinate for 30 minutes.
Spray the pan with olive oil and bring it to medium heat.
Add the shrimp and cook the shrimp for approximately 3 minutes or until it curls into a “C”.
Chipotle Cabbage
Place the coleslaw in a bowl. Add in the Chipotle Mayo and chili powder. Mix well. Add in the chopped cilantro. Mix well. Place inside a warmed taco and then add the Chipotle Shrimp, Pico de Gallo, and Chipotle Lime Creama. Top with avocado and lime.
Directions
Heat the tortillas. Top it with the cabbage, shrimp, and then the avocado. Serve with the Pico de Gallo and Chipotle Lime Creama.
